Pescador de Sueños

Lots are produced using traditional techniques requested of the participating mezcaleros: stone-oven or conical pit cooking, milling (including tahona), fermentation in local wooden tinas (sabino) and distillation in copper or clay stills depending on the palenque. Some lots are double distilled; after distillation certain lines are rested in glass to preserve aromatic profile.

Traditional artisanal distillation: stone-oven cooking with burial, milling including tahona, fermentation in local wooden tinas (sabino) and distillation in copper or clay alembics depending on the local producer; several lots indicate double distillation.

For some lines (e.g. The Claw Collection) lots are matured in glass containers for at least one year before bottling; other expressions may be joven (young) or have short aging.
