Production method
Yeni rakı is produced from suma (grape distillate) or from suma blended with agricultural alcohol, with added anise (Pimpinella anisum) and distilled in copper pot stills. Some expressions involve multiple distillation passes and extended distillation times (e.g. Uzun Demleme).
