    How White Wine Is Produced: White Winemaking

    For the production of white wines, black and white berried grapes are used. Some examples of white berried grapes are Trebbiano, Verdicchio or Chardonnay, while Pinot Noir as a black berried grape. The color of the outgoing wine in fact completely depends on the vinification process used. In the case of black berried grapes, only the pulp of the berries is used and the skins are not left in contact with the must. ...

    Unlike red vinification, in white vinification the marcs (solid parts) are not left to macerate with the must to prevent the resulting wine from becoming too loaded with coloring substances and tannins. In fact, crushers are used that are able to gently press the grapes, preventing the solid parts from mixing with the must in the tank. Subsequently to the pressure, we proceed with the pressing (squeezing) of the marcs and then add them in variable proportions to the must.

    The main stages of white winemaking are:

    Diraspatura: it consists in the elimination of the stalks, that is the vital "organ" of the grapes, that is the connection of the single grape with the rest of the plant. The result of an early de-stemming is to obtain a more mordant and less astringent wine.

    The pressing of the grapes instead it consists in making the grapes burst, avoiding, however, crushing the seeds contained within. Its purpose is to release the maximum quantity of juice, to put in contact the yeasts present on the peel and the must rich in sugar. Furthermore, it also has the purpose of aerating the must to ensure a correct start of fermentation, to allow a good maceration of the whole grape, of the dissolution in the whole of the coloring substances contained in the grape skin and the passage into the juice of yeasts and fermentation activators.
