Distillation and production

Production method

For Banfi grappas, steam distillation is adopted with the classic double distillation system of fermented pomace; some bottlings are unaged, while others undergo wood maturation (see Riserva references).

Distillation

Steam distillation, with the classic double distillation system of fermented pomace.

Ageing

Variant: many bottlings are unaged; the grappa 'Poggio alle Mura' (Riserva) is aged in Slavonian oak barrels (for example cited as 18 months for the Riserva).

Producer history Banfi

The Banfi estate (Castello Banfi) is an enological company based in Montalcino, Tuscany. Run by the Mariani family, the company has been active since 1978 and, in addition to wine production, has developed a selection of specialties including grappa and distillates linked to its appellations and associated estates.

Production philosophy

To enhance the territory and raw materials, focusing on the quality of the pomace and on traditional production methods supported by enological control and research. The specialties (including grappa) are presented as expressions of the grapes and their territories of origin.

Territory

Headquarters and production heart in Montalcino (Tuscany); for some bottlings (e.g. Brachetto) the pomace comes from different areas such as the Acqui Terme area (Piedmont). The flagship grappas come from the pomace of Brunello di Montalcino (Sangiovese) produced on the Banfi estates.
