The Bourgogne Côtes d’Auxerre Blanc Gueules de Loup produced by Guilhem and Jean Hugues Goisot is truly a gem of Burgundy's winemaking. This white wine is distinguished by its refined elegance and extraordinary purity. Made entirely from Chardonnay grapes, cultivated following strict organic principles, this wine reflects the essence of its terroir.

On the nose, the Gueules de Loup offers a complex and intensely aromatic bouquet, with notes of ripe fruits such as peach and pear, nuances of white flowers, and a slight mineral touch reminiscent of flint. On the palate, the structure is well-balanced: it is fresh but with a medium body, a lovely acidity leading to a long and pleasantly persistent finish.

Served at a temperature of 10-12°C, this wine is excellent to savor young but also has good aging potential. It pairs beautifully with fish dishes, seafood, delicate poultry, or as an aperitif. A wine that seduces with its elegance and ability to clearly express the character of its territory.

Winery history
Family-owned estate with deep roots in the vineyards of the Grand Auxerrois. Jean‑Hugues and his wife Ghislaine have led the business since the late 20th century, and today their son Guilhem, together with his wife Marie, is part of the management. The estate’s website highlights the vineyard’s long-standing presence in the area and the transmission of family know-how across generations.
Production philosophy
Vineyard and cellar work oriented toward respect for the living world: managed under certified organic agriculture and biodynamic practices. Winemaking with indigenous yeasts, moderate use of SO₂, and choice of ageing vessels according to the terroir and the age of the vines to seek the fullest expression of the soil.
Terroir and vineyards
Vineyards spread across the Grand Auxerrois, with parcels in the communes of Saint‑Bris‑le‑Vineux, Irancy and Chablis. Soils are typically Kimmeridgian—clays and marls that impart minerality and tension to the wines.
