The Cabernet Istrice Alto Adige DOC from Elena Walch shows a composed profile with pleasant freshness, an expression of the Alto Adige area. Visually it displays an intense ruby color; on the nose there are notes of red and black fruits, light herbal hints and a touch of delicate spice. On the palate it is balanced, with sapid tannins and a structure that supports drinking without being overpowering. The persistence is moderate, leaving fruity echoes and a slight mineral note.

It pairs easily with red meats, roasts and medium-mature cheeses, but can also work well with mushroom dishes or savory preparations. It is advisable to serve it at around 16-18 °C in large glasses to enhance aromatic expression. Winery history
Trained as an architect, Elena Walch raised the international profile of her family estate by modernising vineyard and cellar practices and emphasising single-vineyard expression. In recent years leadership has been progressively assumed by her daughters Julia and Karoline (fifth generation).
Production philosophy
Strongly terroir-driven approach: emphasis on single 'Vigna' sites, manual vineyard work, sustainability-oriented practices and careful cellar ageing (e.g. French barriques and extended bottle ageing).
Terroir and vineyards
