Grottafresca comes from 100% Chardonnay grapes, coming from vineyards grown on the hills of the Rimini hinterland. The vinification takes place with the long Charmat Method (70 days in an autoclave).

When poured it has a straw yellow color with a well integrated fine bubble, persistent and numerous olfactory characteristics, with a good structure.

An extremely versatile goblet that lends itself well to accompanying appetizers, white meat and fish dishes.

Winery history
The winery has operated under the name Le Rocche Malatestiane since 1959, evoking the historic Malatesta family. Over time it has developed into a cooperative bringing together numerous winegrowers from the Rimini area; in recent years it has launched projects to enhance Sangiovese and to carry out soil zoning to better express the differences of the local terroirs.
Production philosophy
Focus on regional character by highlighting Sangiovese, careful grape selection, and separate winemaking by terroir. The winery combines conventional practices with investment in soil analysis and underground maturation to enhance the structure and complexity of its wines.
Terroir and vineyards
Vineyards are situated on the hills of the province of Rimini, from the upper Val Marecchia to the inland area of Cattolica, with exposure to the Adriatic Sea. The wine-growing landscape is described as a mosaic of micro-terroirs with varying altitudes and soil types. The winery also uses an underground cave at Monte Giove for the aging of some wines.
Awards and recognitions
The Sangiovese "Mons Jovis" was awarded First Prize at the Palio del Sangiovese. Several individual labels from the winery have also been highlighted and rated by industry guides and publications.
