The Lambrusco di Sorbara DOC Spumante Metodo Classico "Testacalda" produced by Cantina di Soliera is an effervescent wine that captures the essence of Lambrusco Sorbara grapes grown in the heart of Emilia-Romagna. This refined sparkling wine is created using the Metodo Classico, a traditional bottle fermentation process that enhances its complexity and finesse.

Characterized by a soft ruby red color with violet reflections, "Testacalda" features very fine and persistent perlage, inviting a unique tasting experience. The nose is distinguished by lively notes of red fruits such as raspberry and strawberry, enriched with floral nuances of violet and wild roses, typical of the Sorbara variety. A light hint of yeast and brioche provides a pleasant balance, bearing witness to careful maturation on the lees.

On the palate, "Testacalda" shows extraordinary freshness and acidity, balanced by a softly tannic structure that enriches with each sip. Red fruits return as protagonists on the palate, accompanied by a light almond note and a finish that recalls toasted bread, a result of the elevation in the bottle.

Winery history
It is part of an interprovincial group headed by Cantina di Limidi; over time several local wineries have been incorporated. The cooperative brings together hundreds of members and preserves historical records that document the area's production and technological evolution, and it also plays a leading role in the production of Lambrusco di Sorbara in the northern Modena area.
Production philosophy
It aims to enhance the Po Valley through the selection of local crus and traditional winemaking techniques. The work focuses on preserving historic Lambrusco varieties, selecting historic vineyards, and improving the sustainability of agricultural practices.
Terroir and vineyards
