Pairing Fish, shellfish, spicy dishes
Thomas Dorfmann's Riesling DOC expresses a pleasant aromatic immediacy without being intrusive. In the glass it opens with clear aromas of ripe citrus, white flowers and a subtle mineral tension; overall it is fresh and linear, with a natural purity that invites a sip. The acidity is lively but well balanced, supporting the fruit without drying it out, while the structure remains slim, suited to those seeking elegance rather than opulence. The palate is clean and flowing, with a balance that doesn't tire.

On the palate it confirms the announced restraint: a savory sip, with an acidic backbone that gives vigor and a persistence that recalls lemon zest and light herbaceous notes. It's not a wine for heavy pairings; it works best with delicate seafood dishes, shellfish, baked fish and fresh cheeses, and it also surprises with spicy Asian cuisine. It's a white that pairs well both as an aperitif and with more structured dishes; serve well chilled, around 8–10 °C, to preserve its freshness and aromatic clarity.
