The Catarratto-Chardonnay Salaparuta DOC by Eycos, produced by Azienda Vinicola Vaccaro, is born in one of the most suitable lands of western Sicily, where the Mediterranean climate and limestone-rich soils create the ideal environment for these grape varieties. The Catarratto, a traditional Sicilian white, combines with the international elegance of Chardonnay to create a fresh, harmonious, and balanced wine. After careful fermentation, it undergoes aging in steel tanks that preserve its minerality and varietal aromas.

On the nose, notes of white-fleshed fruit, such as apple and peach, emerge, accompanied by light citrus hints and floral nuances. The palate is lively and savory, with good structure and a harmonious finish, inviting a second sip. Excellent as an aperitif, it pairs wonderfully with fish dishes, shellfish, and fresh cheeses, enhancing the flavors without overpowering them.

Winery history
