"Le Sabbie dell'Etna" is a wine that is produced with grapes from vines grown on volcanic soils on the northern side of Etna, on black sands and clay, at an altitude of about 720 m a.s.l.
It was born in the Cavanera Etnea estate of Firriato from the union of two great vines of the island: Carricante, a white grape viticulture symbol of the volcano, and Catarratto, the iconic vine cultivated throughout Sicily famous for its great structure and olfactory charge. A winning combination for a bottle that embodies all the beauty and varietal richness of the Isola del Sole.
The harvest is done manually towards the second decade of October. After a soft separate pressing of the grapes, they are vinified in stainless steel tanks for about three months in contact with the noble lees. Then the assembly is carried out and the wine remains in the bottle to rest for a further two months before being put on the market.
You can admire its straw yellow color with greenish reflections. The typical aromas of Carricante arrive on the nose: aromas of white and yellow flowers, notes of aromatic herbs and delicate savory hints. In the mouth the powerful structure of Catarratto prevails defined by fruity hints of yellow peach and ripe pear, with slight aromas of tropical fruit. The finish is fresh and mineral, with good persistence.
It goes perfectly with first and second seafood dishes and grilled shellfish.
