Pas Dosé "Vindice" produced by the renowned winery Poggio della Dogana, located in the heart of a region historically dedicated to high-quality viticulture. This sparkling wine represents a sublime expression of the terroir from which it originates, offering a deeply elegant and sophisticated tasting experience.

The "Vindice" is crafted following the rigorous Classic Method, which involves a second fermentation in the bottle for a period exceeding 36 months, thus imparting complexity and structure to the wine. The uniqueness of this sparkling wine is revealed in its Pas Dosé version, meaning no dosage liquor is added at the time of disgorgement, allowing the wine to express the purest essence of its character and terroir without any alteration.

On the nose, there are immediate notes of fresh citrus, green apple, and slight hints of toasted bread, inviting a taste. On the palate, the attack is lively yet balanced, thanks to a fresh acidity that blends harmoniously with a delicate creamy and buttery sensation. The fine and persistent bubbles further enhance the aromatic complexity of the wine and ensure a long and clean finish.

Ideal as an aperitif, the "Vindice" can beautifully accompany light starters, raw fish, or seafood. It is also an excellent companion for celebrations and special moments, thanks to its high refinement and its ability to evoke the pure pleasure of taste.
