The Spumante Negroamaro Rosato Brut - Rosarose Rosè by Paolo Leo stands out for its elegance and finesse, embodying the typicality of the Negroamaro grape variety cultivated in the heart of Puglia. This sparkling rosé is the result of a meticulous selection of grapes, which are hand-picked from carefully monitored vineyards to ensure the highest quality.

The winemaking process begins with gentle pressing of the grapes to preserve all the primary aromas of the fruit. Subsequently, the must ferments at a controlled temperature, following the long Charmat method, which involves maturation on the lees for several months. This process imparts greater complexity and structure to the wine.

Visually, the Rosarose Rosè displays a bright and captivating blush pink color, with fine bubbles that dance in the glass, adding vitality to the visual spectacle. On the nose, it offers a rich and persistent bouquet, where notes of small red fruits like wild strawberries and raspberries can be detected, enriched by slight floral hints and a pleasant toasted bread note, due to prolonged contact with the lees.

On the palate, the wine is lively and elegant, with excellent freshness and a beautiful acidity that balances its structure. The aromatic persistence is remarkable, leaving a clean and pleasantly fruity sensation that invites another sip.

This sparkling wine is ideal as an aperitif but also pairs wonderfully with light appetizers, fish dishes, and vegetarian cuisine. Additionally, it is an excellent choice for celebrating special occasions or simply adding a touch of refinement to any moment of the day.

Winery history
The company known as Paolo Leo stems from the experience of several generations of Salento winegrowers and, in its current form, began with the bottling activity led by Paolo Leo in the late 1980s. The business has grown by supplementing its historic premises in San Donaci with a second winery inaugurated in 2020 in Monteparano, near the Primitivo di Manduria area.
Production philosophy
Enhancing the Salento region through the cultivation and winemaking of native grape varieties, adopting practices focused on environmental and economic sustainability. The estate produces both conventional lines and an organic-certified range, publishes sustainability reports and has obtained environmental responsibility certifications.
Terroir and vineyards
They operate in the heart of Salento, with their main base in the municipality of San Donaci and a second facility in Monteparano, at the gateway to the Primitivo di Manduria area. Their vineyards and appellations cover the characteristic areas of Salento and southern Puglia.
