Monsupello Spumante Pas Dose presents itself with an essential, luminous style: clear at first glance, it dresses the glass in a pale yellow with green reflections and a fine perlage that supports an immediate aromatic profile. On the nose, fresh fruit such as green apple and citron emerge, with discreet floral hints and a slight savory note; the yeast trail is barely perceptible and contributes to a sense of cleanliness rather than opulence. The texture is fine and the tactile sensation is brisk, almost saline.

The sip confirms the pas dose philosophy: dry, agile and vibrant, with lively acidity that supports the drink without weighing it down and a sapidity that lengthens the finish in a citrus key. Slim-bodied, with centered balance and pleasant persistence, it is versatile at the table: excellent with seafood appetizers, crudo, light fried dishes or fresh cheeses; also try it as an aperitif alongside small summer plates. It pairs well with more structured fish dishes and light cuisines, without overpowering them. Serve very cold to appreciate the freshness and the clean finish of the sip.

Winery history
The Boatti family has been rooted in the Oltrepò Pavese region since the late 19th century. The first references to their winemaking activity date back to 1893. In the years that followed the estate expanded with the acquisition of Podere La Borla and underwent major winery modernizations led by Carlo Boatti in the mid-20th century. Today the estate is managed by the heirs and retains a strong identity focused on the production of quality sparkling wines.
Production philosophy
Strong focus on terroir and quality: cultivation of hillside vineyards, controlled vinification using modern technologies, and production centered on expressing Pinot Noir and Chardonnay via the Traditional Method, accompanied by still wines that reflect the territory. The estate emphasizes family tradition and meticulous technical care in both vineyard and cellar.

Headquartered in Torricella Verzate, in the heart of Oltrepò Pavese; vineyards are located on hills at about 160–200 meters above sea level, on clayey and calcareous soils that favor temperature variation and traits of freshness and minerality.
