Sauvignon Aristos comes from the vinification of 100% pure grapes of the homonymous vine. The origin is the classic one of the DOC of Alto Adige Valle Isarco.
The vinification involves gentle pressing after a short time of contact with the skins, temperature-controlled fermentation in stainless steel tanks, no malolactic fermentation. 7 months is the duration of maturation on the noble lees.
In appearance it has a straw yellow color with greenish textures. The bouquet recalls the classic scent of wild herbs among which lily of the valley, verbena and nettle stand out, well blended with citrus and varietal notes. The taste is decidedly full, dry, with a marked acidity and a long herbaceous aftertaste that delights the palate from the first sip.
It is recommended to serve it on the table as an aperitif, or combined with appetizers based on fish, crustaceans and molluscs, as well as being perfect with first courses seasoned with simple sauces and vegetables.
