The vineyards are grown very high up, most of them at 750m above sea level, between Bolzano and Bressanone, a particularly congenial position to give freshness to the grapes, given the constant climate change tending towards heat. For this particular product, the two clones of Pinot Noir, 165 and 777, both French, are used. The bunch of 777 is destemmed and fermented in tonneaux, while that of 165 is cold macerated and vinified in whole bunches in steel, in order not to alter the properties rich in hints of ripe fruit and jams that it manages to transfer to the wine. Maturation in tonneaux lasts 18 months, followed by further refinement in the bottle for 6 months before being put on the market.
When poured it shows a pale ruby red colour, transparent but luminous. A mountain wine that gives off fruity aromas of currant and raspberry, typical hints of the vine. The sip is soft and slightly spicy, almost sweet but very fresh, with a light aroma of licorice and integrated fine tannins.
We recommend pairing with red meats, game and aged cheeses.
