Lo Champagne Blanc de Noirs Cuvée Haute Volée Extra Brut 1er Cru prodotto da Waris Larmandier è un’autentica espressione del terroir della Champagne, più precisamente dalla rinomata area dei Premiers Crus della Côte des Blancs. Questo champagne, composto esclusivamente da uve Pinot Noir, offre una complessità e una profondità particolari, tipiche di questo vitigno a bacca nera.

All’esame visivo, si presenta con un colore giallo brillante, arricchito da bollicine fini e persistenti che denotano una fermentazione accurata e prolungata. Al naso, incanta con sentori di frutti rossi e neri come ribes e more, accompagnati da note di agrumi come il pompelmo e un delicato accenno di spezie e tostatura dovuto al riposo sui lieviti.

In bocca è deciso e strutturato, esibendo una vivace acidità bilanciata da una sottile cremosità. Il dosaggio Extra Brut, con un bassissimo contenuto di zucchero, esalta la purezza e la complessità aromatica del Pinot Noir, lasciando emergere una mineralità affascinante e una lunga persistenza.

Notable cuvées: Racines de Trois, Les Bauves, Les Regards d'Avize, Haute Volée. Small, artisanal production with a focus on low-intervention cellar techniques.
Winery history
Family-run, the maison was founded by the union of the Larmandier and Waris families; ownership and winemaking are managed by family members who have re-established ties to traditions and vineyard parcels in the Avize area. The winery has progressively refined cuvées sourced from prized Chardonnay parcels and small Pinot parcels in the surrounding area.
Production philosophy
Strong focus on terroir and low‑intervention viticulture: biodynamic management of the vineyards, winemaking with indigenous yeasts and practices designed to express the character of the originating crus. In the winery, too, a natural approach and respect for the vineyard are prioritised.
