First-pressed wine obtained with a soft pressing through mechanically regulated presses. Pumping is avoided by decanting only by gravity in order to avoid oxidation. Very low use of sulfur dioxide (less than 30 mg/l). Natural decantation and an alcoholic fermentation lasts about two weeks at low temperature. The malolactic fermentation then following the natural fermentation, as for each Champagne of the Maison, is done naturally and completely.
The result thus obtained is assembled for 50% of the wine aged in oak barrels for a year and after bottling it is aged for 5 years in the bottle.
The nose is very fine with citrus fruits, apple, almond and nutmeg; once in the mouth it is an explosion of pleasure, with a soft and soft bubble, it can be tasted and carefully carefully, bringing the taste buds to hints of candied fruit on the finish.
