The Valpolicella DOC Superiore BIO from Ripa della Volta, a product of the acclaimed Ottella winery, is an authentic expression of Veneto's winemaking tradition with a deep commitment to organic farming. This wine stands out for its environmentally-friendly production, excluding the use of pesticides and synthetic chemicals, favoring a more natural and sustainable approach.

The selection of grapes for this Valpolicella Superiore adheres to strict quality standards, with a manual harvest of the best clusters of Corvina, Rondinella, and Molinara. These indigenous varieties, grown on fertile Venetian soil, give the wine a distinctive character and robust structure.

The vinification process includes fermentation at controlled temperatures to preserve the fresh and fruity aromas of the grapes, followed by a period of aging in oak barrels that harmonizes the fragrances and refines the palate. This Superiore is notable for its brilliant ruby red color, promising a complex olfactory experience with notes of cherry, sweet spices, and a slight hint of wet earth, typical of the Valpolicella soils.

On the palate, the Valpolicella DOC Superiore BIO shows a perfect balance between acidity and soft tannins, culminating in a persistent finish that invites another sip. It pairs beautifully with hearty dishes like mushroom risotto, grilled meat, and aged cheeses.

Serve at a temperature of 16-18°C to enhance all its nuances. This wine not only delights the palate but also respects the land from which it comes, reflecting Ottella winery's commitment to a greener future.
