In 1940 the Antinori family took possession of the estate, in 1985 the first vintage of Cervaro della Sala was produced and placed on the market in 1987. The wine was born in the municipality of Ficulle, in the province of Terni, from 90% Chardonnay and 10% Grechetto grapes . The refinement for the Chardonnay is carried out in barriques for 5 months and in steel for the Grechetto.
Bright yellow in color with greenish reflections to the eye, Cervaro della Sala offers an extremely rich, fresh and complex bouquet to the nose, which gives off light aromas of hazelnut butter, sweet notes of vanilla and floral hints of white flowers. A sip that is perceived elegant, with an amazing minerality, followed by a pleasant roasted taste that harmonizes with the structure, highlighting the citrus and tropical hints.
Elegant and refined, this white wine is an excellent companion to serve in combination with fish-based dishes, white meats and delicate vegetables.
