Etna Rosato is an excellent Sicilian wine, obtained with Nerello Mascalese grapes grown in Castiglione di Sicilia, Contrada Montedolce, on volcanic soil, at an altitude of 730/750 m a.s.l. The cellar avails itself of the consultancy of the oenologists Andrea Delpiano and Davide Rosso.
The vinification involves a soft direct pressing of the whole grape, with fermentation in stainless steel tanks for a period of about 15 days. Refinement always in steel tanks on fine lees for about 5 months, with weekly battonage in the first month and monthly in the last few months.
In the glass it shows off a soft and bright pink. The olfactory profile is rich floral aromas, with fruity and citrus scents of pink grapefruit, pomegranate and raspberry, with hints of aromatic herbs. On the palate it is dynamic, with delicate fruit that leads towards a finish of pleasant mineral freshness.
Excellent expression of volcanic wine, a label to try absolutely.
It goes perfectly with all seafood dishes, it is perfect with vegetarian first courses, excellent with fresh cheeses.
