Pa'ro rosso is a fascinating and complex Tuscan still red wine, produced with 75% Cabernet grapes and 25% Merlot grapes, grown at an altitude of 350 m above sea level, on calcareous soil with clay and silt, facing south -west.
The grapes are harvested in September-October, when the berries have reached the right ripeness. After a light pressing they are vinified in stainless steel tanks at a controlled temperature, where the natural malolactic fermentation also takes place.
The refinement is carried out in oak barrels for 12 months, and the 4,000 bottles of this enveloping Pa'ro will continue their rest for another 12 months.
In the glass it has a splendid intense and impenetrable ruby red colour.
The nose opens with oriental aromas of spices and licorice, but also hints of pepper and coffee, mixed with fruity nuances of black berries, blueberries and blackberries, the last note that can be perceived is that of ripe wild plums.
The first sip is enveloping and seductive with the fullness of taste; then enveloping softness and alcohol are balanced by elegant tannins and good freshness. A very intense, fine, excellent wine that sIt goes perfectly with furred and feathered game dishes, aged cheese platters, local ham and red meats with sauces.
