Flowers is the name chosen to represent the top selections of the Von Blumen project. Under the name of Flowers we will therefore find the types that in a given vintage allowed us to isolate, in our vineyards, some small extraordinary parcels that then followed a different and prolonged refinement.
The grapes of this vine are harvested manually, as in the past, starting from the beginning of September. After a gentle destemming, the grapes undergo a short cold maceration in a stainless steel press. The alcoholic fermentation takes place in steel tanks at a controlled temperature.
At the end of the alcoholic fermentation, the wine is kept in contact with the lees, in large wooden barrels (30 hectoliters) for about 10 months.
The Sauvignon has a pale yellow color with slight greenish reflections. The nose releases an aroma of white flowers and flint with vegetal notes in the background. In the mouth it is an explosion of freshness and aromas of pineapple, sage and anise. At the table it is an excellent combination with fish appetizers, delicate first courses and grilled shellfish; a sublime glass that will take you back to unspoiled nature on the slopes of Monte Corno.
