Merlot Colli Euganei is produced between Baone and Cinto Euganeo, two areas in the south of the Euganean Hills. The soil of volcanic origin on which the vineyard grows is characterized by the Scaglia Rossa, a marine sedimentary rock. The vinification lasts about 15 days and is followed by a short malolactic fermentation in cement. To complete the production process, the wine is aged in French oak tonneaux for 12 months in a 15 hl barrel for about a year.
Merlot is a ruby red wine with a characteristic slightly spicy and chocolaty bouquet which, however, recalls red fruits. The spices can also be perceived in the aftertaste it leaves in the mouth, while as soon as it is tasted it is velvety, full and elegant.
A great way to enjoy this wine is to accompany it with meat.
