Production method
According to official information, production leverages the family's enological expertise, prolonged spontaneous fermentations, the use of local spring water and the reuse of casks that previously contained typical Tuscan wines for aging.
Distillation
Single, discontinuous distillation in a Frilli-type (hybrid copper) pot still heated by a steam jacket; prolonged spontaneous fermentation (indicated as six days / 7 hl in terracotta amphorae according to official sources).
Ageing
Maturation in Tuscan oak casks that previously held local wines (e.g. Vin Santo, casks used for Super Tuscans) to transfer the wine component to the spirit.

Florentis was born as a project of the Chioccioli Altadonna family, known for wine production in Chianti Classico.
