Distillation and production

Distillation and production

Production method

Production based on the distillation of selected vinacce: a mixed approach that includes steam distillation for the main line, modern industrial processes for large volumes and small-batch distillations for special products. Practices include selection and storage of vinacce and wood ageing for some expressions (Cask Finish). The company highlights circular practices and environmental certifications.

Distillation

Steam distillation for the line, with use of both continuous columns for large-scale production and batch/boiling distillations in small alembics at group sites for special products.

Ageing

Wood ageing and cask-finish: some grappas are aged or complete maturation in ex-Barolo, ex-Port, ex-Bourbon or ex-Sherry barrels/barriques; Slavonia and Limousin oak casks are also used for specific expressions.

Producer history Luigi Francoli

The Francoli family's production has alpine roots, but the modern business consolidated when Luigi Francoli moved to Ghemme (NO) and established the company: sources indicate the family's involvement in distillation since the postwar period and the founding of the activity in Ghemme in 1951. The commercial line under the "Luigi Francoli" brand was launched later as a premium range dedicated to grappa.

Production philosophy

Focus on the quality of raw materials (selection of vinacce), enhancement of the Piedmont territory and sustainability. The company promotes circular practices to limit environmental impact and declares carbon-neutrality–oriented approaches in its official communications.

Territory

Ghemme, Alto Piemonte (Piedmont). The vinacce mainly come from Piedmontese grape varieties (e.g., Moscato, Nebbiolo, Barbera) and nearby areas.
