Distillation and production

Distillation and production

Production method

Production includes distillation of single malts and grain whisky as well as the crafting of liqueurs and gin. The blended whiskies result from assemblies of malts and grain whiskies sourced from the group's distilleries; for Roku gin Suntory uses a technique where botanicals are distilled separately to preserve their characteristics.

Distillation

For the whiskies: distillation takes place both in single malt stills and in grain distillation plants (later used in blends). For Roku: botanicals are distilled separately to preserve aromatic profiles; blending/assembly practices are used for blended ranges such as Hibiki.

Ageing

Suntory whiskies are matured in several types of casks and then blended; some expressions are finished or aged in different cask types to achieve characteristic complexity and aromas.

Producer history Suntory

The origins date back to 1899 when Shinjiro Torii opened the Torii Shoten shop in Osaka to sell imported wines; from that business grew the current Suntory, which developed into an international group with numerous operating companies and spirits brands. The Hibiki brand was introduced in the late 1980s as an expression of Suntory's art of blending, while products like Midori and Roku form part of its historical and contemporary portfolio.

Production philosophy

Suntory declares an approach based on craftsmanship, attention to nature and seasonality, and the pursuit of harmony between people and the environment. The group's communication emphasizes care for detail and Japanese tradition applied to spirits production.
