Production method

Raw materials come from Negros sugarcane: molasses is fermented and the distillate is processed and aged on the island. Standard releases are aged in ex-bourbon American oak barrels (and in some cases ex-Rioja) and then blended by a master blender. Some expressions receive sherry cask finishes; the Masskara edition is produced via an infusion/distillation in a pot still with local botanicals.

Ageing

The Don Papa brand was launched in 2012 by Stephen Carroll through the Bleeding Heart Rum Company, with the aim of creating a premium "single-island" rum produced and aged on the island of Negros (known as "Sugarland"). Over the years the brand expanded its range with special editions (Rare Cask, Sherry Cask, Masskara, Baroko, etc.) and gained international visibility. In January 2023 Don Papa was acquired by Diageo in a publicly announced deal.
