It comes from Croatina, Rara and Barbera grapes from vineyards grown on the first hills of Oltrepò Pavese, located in the municipalities of San Damiano al Colle, Rovescala and Montù Beccaria.

After crushing and destemming, maceration on the skins is carried out for a period of 7/15 days in stainless steel tanks at a controlled temperature. The maturation is at least 5 months, then the refermentation takes place in thermo-conditioned autoclaves at 6 atmospheres, for the second fermentation. The refinement in the bottle is 40 days before being put on the market.

It shows a deep ruby red color with purple reflections. On the nose, intense fruity aromas of blackberry and raspberry rise. The taste is decidedly structured, elegant and soft, with an almond and fruity plum aftertaste. Very marked retro-olfactory persistence.

Perfect with meat in general, excellent with game and braised meats, ideal with aged cheeses. Try the pairing with fish-based dishes served at 8°.
