Brunello di Montalcino is famously known for its stringent production standards and meticulous attention to detail. Colombaio di Tassi adheres to these principles with a careful selection of Sangiovese grapes, which are left to mature for an extended period, typically at least four years, with two of those years in wooden barrels, to refine the complexity of its bouquet and palate structure.
Visually, the wine presents an intense ruby red color, which can shift to garnet with aging. On the nose, it stands out for its aromatic profile evoking sensations of ripe red fruits, enriched by hints of vanilla and earthy spices thanks to the aging in wood. Notes of tobacco and dark chocolate can be perceived upon closer inspection.
On the palate, Brunello Di Montalcino Colombaio di Tassi demonstrates excellent structure and a richness rarely found in other wines. Well-balanced tannins support a dense and complex texture, concluding with a long and persistently aromatic finish. Its balance and elegance make it an ideal companion for hearty dishes such as meat roasts, game, and aged cheeses.
