Perfect for slow tasting, it suits meditative moments or small after-dinner rituals; the wooden case adds visual appeal and also makes it suitable as a gift. Serve at room temperature in tulip glasses to capture the aromas: it pairs well with dark chocolate that isn’t too bitter, small selections of aged cheeses, or cigars with a refined aroma, without overpowering them.

Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
