The Dolcetto d'Alba DOC "Vilot" produced by the Cà Viola winery is a distinctive example of the skill and passion with which this renowned Piedmontese winery transforms the excellent fruits of this variety into a wine that fully expresses the character of the local terroir.

The "Vilot" is made from Dolcetto grapes grown in the hills around Alba, famous for their calcareous and clayey soil which gives the wine a robust structure and an intense aromatic expression. The vines enjoy optimal sun exposure that allows the grapes to mature perfectly, leading to the production of wines with a pleasant complexity and harmony of flavors.

With an intense ruby red color, this Dolcetto d'Alba opens with lively scents of red fruits, particularly notes of cherry and raspberry. On the palate, the wine is surprisingly rich, with a vibrant freshness that balances the abundance of fruit. Soft tannins and a clean finish give this wine immediate drinkability, although it also possesses a good aging capacity.

Traditionally served with Piedmontese dishes such as tajarin with truffles or raw meat al albese, the "Vilot" also enhances medium-aged cheeses and red meat dishes. Winery history
Ca' Viola was established from the winemaking activity of Giuseppe Caviola. The estate took its first steps in the early 1990s, beginning with leased vineyards in Montelupo Albese and its first artisanal vinifications. Over time the business has developed wines of Dolcetto, Barbera and Nebbiolo; the production site and hospitality activities are concentrated in Dogliani.
Production philosophy
Strong focus on terroir and quality: production focused on expressing local grapes through minimally invasive vinification, research that blends tradition and innovation, and oenological consultancy to deepen the understanding of wine in its various aspects.
Terroir and vineyards
The estate works vineyards in the Langhe, with principal plots in Montelupo, in Novello and in Bossolasco. The vines are tended on steep slopes and at elevations that contribute structure and longevity to the wines.
