Elegant and full of character, this Collet Champagne Blanc de Noirs expresses the typical tension of wines made from red-skinned grapes vinified as white: ripe red fruit in backlight, a bread-crust note that doesn’t overpower, and a mineral thread that keeps the palate clean. The bubbles are fine and persistent, supporting a full texture without losing freshness; the mouthfeel is rich yet balanced, with a pleasing interplay between softness and sapidity that continues into a dry, well-persistent finish.

It pairs well with cured meats and dishes based on white meats, smoked fish or not-too-mature cheeses, but it also stands up elegantly to more structured courses. Serve chilled, preferably in wide glasses to let the complexity breathe; it is a versatile companion for informal aperitifs and more refined dinners, appreciated both for immediacy and depth. A wine that speaks of substance without excess.

Founded in 1858, with historical ties to Victor Emmanuel II and Rosa Vercellana. Based in Serralunga d'Alba, producer of distinguished Barolo and Langhe wines. Manages and coordinates a network of winemakers across approximately 120 hectares of certified organic vineyards. Diversified production: approximately 44% red wines, 26% white wines and 30% sparkling wines. Recent developments at 'Rinascimento Verde' include sustainability reports and biodiversity projects.
Winery history
The estate made history in the 19th century: purchased by Vittorio Emanuele II in 1858 and associated with Rosa Vercellana, the property was developed by the Mirafiore family and had already established its commercial reputation by the late 1800s. In the 20th century the Fontanafredda brand consolidated as a reference producer in the Langhe; after hardships related to crises and wars, the company regained momentum and, in 2008, was relaunched under new ownership led by Oscar Farinetti. In recent years Fontanafredda has undertaken a program of technical renewal and sustainability known as “Rinascimento Verde,” publishing sustainability reports and holding certifications as reported by the producer.
Production philosophy
Local production focused on quality, the protection of the vineyard landscape and sustainability. Fontanafredda coordinates a network of suppliers to operate across a wide area while maintaining a strong focus on conversion to organic farming, biodiversity and the transmission of agricultural practices between generations, with a significant investment in storytelling and the local community.
Terroir and vineyards
Located in Serralunga d'Alba, in the heart of the Langhe, the estate manages vineyards in several municipalities of the Langhe and lower Piedmont at varying altitudes. The area is characterized by limestone hills and the typical continental climate of the Langhe.
Awards and recognitions
Recognitions cited by the producer and by international guides/ratings: presence of wines in Wine Spectator's Top 100, high scores from Wine Spectator and Wine Enthusiast for certain vintages of Barolo; nominations/recognitions such as "European Cellar of the Year" reported on the website.
