Pairing Aperitifs, fish, shellfish
Fine bubbles that support a slender body and vibrant freshness. On the nose it presents notes of green apple, ripe pear and delicate white flowers, while a subtle toasted, bready note hints at a pleasant yeasty reminiscence. The palate is savory and taut, with balanced acidity that keeps it easy‑drinking without sacrificing a distinct softness. The texture is refined, with a balance that evokes a classic, measured style.

The finish is pleasant, with citrus echoes and a slightly creamy close that invites the next sip; it is versatile at the table: ideal with shellfish, gently seasoned fish dishes or fresh cheeses, but it also holds up well to refined aperitifs. Served cool, it delivers finesse and delicacy and is aimed at those seeking a balanced, satisfying and discreet Champagne that accompanies conviviality without overpowering the food.

Winery history
Founded in Aÿ by William Deutz and Pierre-Hubert Geldermann, the Maison established itself in the Champagne scene thanks to the quality of its cuvées. Over time it underwent phases of modernization and changes in ownership that enabled investments in its production facilities; today it is part of the Louis Roederer group. The cellar uses its historic chalk galleries for aging and continues to showcase the area's crus.
Production philosophy
Priority is given to respect for the terroir and to patience: the estate favors distinct vinifications for each cru, carefully calibrated blends and extended cellar aging to develop complexity and finesse, rather than rapid production cycles or invasive manipulations.
Terroir and vineyards
Production is rooted in Aÿ and draws on parcels distributed across the Montagne de Reims, Côte des Blancs and the Vallée de la Marne. The House works both estate vineyards and grapes selected from growers in the surrounding municipalities.
