This Champagne is mainly composed of Chardonnay grapes, followed by a smaller proportion of Pinot Noir and Pinot Meunier, grown in the calcareous soils typical of the Champagne region. The bottle fermentation and the meticulous 'sur lie' aging process give this champagne impeccable aromatic complexity, with notes of citrus, white flowers, and subtle hints of fresh brioche.

Winery history
The Guenin family has been established in Essoyes for generations: online sources record family roots spanning several generations, and the first modern vineyards were planted beginning in 1952. Following changes within the family and the installation of the first press in 1987, Sébastien Guenin returned to run the family business and began bottling his own cuvées from 2015.
Production philosophy
Production focused on respect for the terroir: vineyards converted to organic farming, controlled yields and winemaking aimed at natural expression. The reported practices include fermentations and, for some cuvées, maturation in wood, aiming for precise, mineral expressions of the terroir.
Terroir and vineyards
Essoyes, in the heart of the Côte des Bar. The soils mentioned in the product sheets and descriptions are mainly clay-limestone, with a strong presence of Pinot Noir in the vineyards situated on the local slopes.
