In the glass this Champagne Les Rippes Extra Brut stands out for its fine, lively bubbles and a pale straw color. On the nose it is immediate and bright: lemon zest and green apple accompany a subtle biscuity note born from contact with the yeasts, while a mineral note adds backbone and clarity. The whole is dry and restrained, unadorned, with a vertical character that favors freshness and precision over opulence. The Extra Brut designation translates into a dry, taut sensation, with very little residual sugar that highlights the tension and aromatic cleanliness.

On the palate the sip is tense and fluid; lively acidity supports the structure and sapidity makes the finish saline and persistent. The extraction is elegant, the mouth remains clean and invites another glass; one perceives balance more than power. Ideal as an aperitif or paired with raw seafood, oysters and delicate fish dishes, but also able to stand up to lightly fried preparations. It is also enjoyable with fresh cheeses and carpaccios: a wine to be drunk young to capture its verve. Serve very cold, around 6-8 °C.
