Pairing Red meat, game, aged cheeses
Château Canon La Gaffeliere from Saint Emilon presents a measured red wine with an immediately appealing aromatic profile. In the glass it shows an intense ruby colour; the nose reveals compact red and black fruits, fine spice notes and subtle earthy hints that contribute to a complex yet coherent impression. On the palate it is balanced: well-integrated tannins, acidity that is present without being aggressive, and a flavour structure combining freshness and fullness.

It pairs well with roasted meats, game birds and aged cheeses, and is also pleasant with mushroom-based dishes or rich sauces. It is advisable to open the bottle a few minutes before serving or, for those who prefer, to decant it to encourage openness; serving temperature around 16-18 °C. Suited to convivial occasions and to those seeking a classic, restrained red capable of accompanying structured dishes.
