Château Les Justices, located in the Sauternes appellation, is known for its high-quality sweet wines, which reflect the unique terroir of this renowned wine region. The estate produces wines characterized by an extraordinary combination of sweetness, acidity and aromatic complexity, the result of the careful management of the vineyards and the selection of grapes affected by Botrytis cinerea, or noble rot, which allows for exceptional sugar and aromatic concentrations to be obtained.

The wines of Sauternes, and of Château Les Justices in particular, are appreciated for their rich palette of aromas, which ranges from notes of ripe fruit, such as apricot and mango, to nuances of honey, beeswax and flowers, with possible hints of spice and minerality. The structure is supported by a lively acidity, which balances the natural sweetness of the wine and gives freshness and longevity.

In a 375ml bottle, a demi-bouteille, Château Les Justices offers the opportunity to enjoy the richness and complexity of Sauternes wines in a smaller format, ideal for special occasions or for an intimate tasting. This format is also perfect for those who want to explore the diversity of Bordeaux sweet wines without the commitment of opening an entire bottle.

Sauternes wines, thanks to their intensity and complexity, pair beautifully with a wide range of dishes, from blue cheeses, such as Roquefort, to fruit or cream-based desserts. They are also excellent meditation wines, to be enjoyed slowly to appreciate their evolution in the glass.

Château Les Justices, with its meticulous approach to viticulture and winemaking, is an excellent example of the quality and elegance that Sauternes wines can offer. A 375ml bottle of this wine is not only a pleasure to taste, but also represents a window into the tradition and charm of one of France's most celebrated wine regions.

Sauternes – Winery in Bordeaux (Graves), Nouvelle-Aquitaine

Discover the story and wines of Sauternes.

A sweet appellation in the Bordeaux region (Graves) known for white wines from grapes affected by "noble rot" (Botrytis cinerea), capable of concentrating sugars and aromas and producing dessert wines of great longevity.
Region: Bordeaux (Graves), Nouvelle-Aquitaine
Country: Francia
Grapes: Sémillon, Sauvignon Blanc, Muscadelle
Sweet wines produced through botrytization. Main grape varieties: Sémillon, Sauvignon Blanc and Muscadelle. Area comprising five main communes: Sauternes, Bommes, Fargues, Preignac, and Barsac. Château d'Yquem: the sole "Premier Cru Supérieur" in the 1855 classification for Sauternes wines.
Winery history
The production of sweet wines in the Sauternes area has been documented for centuries: as early as the 17th century grapes affected by noble rot were observed and the most concentrated bunches were selected. The appellation established itself over time and was incorporated into the system of Bordeaux’s great wines; in the 1855 classification Château d'Yquem received a unique distinction among the crus of Sauternes. In recent decades the appellation has maintained its identity by focusing on selective harvesting techniques and on wines capable of significant development in bottle.
Production philosophy
Production is based on observing the local microclimate and on an extremely selective harvest: multiple passes are made through the vineyard to pick only berries properly affected by noble rot. The approach focuses on respect for the terroir and on showcasing the aromatic characteristics derived from noble rot and from the blend of local white varieties.
Terroir and vineyards
The production area is located in the southern part of the Graves district in the Gironde and mainly includes the communes of Sauternes, Bommes, Fargues, Preignac and Barsac. The climate is influenced by the confluence of the Ciron and Garonne rivers, which favors the formation of autumn mists that promote the development of Botrytis cinerea.
