Pinot Grigio forms the backbone of this wine, to which it gives structure, breadth, softness and warmth. Gewürztraminer is decisive for the aromatic quality of the olfactory sensations. Riesling is crucial for achieving the right acid balance and enhancing the gustatory complexity.
Of the three vines, the first two are harvested late, their fermentation and maturation takes place in wood. In summary, three so different vines for such a unique wine, the result of the combination of over-ripening “Mediterranean” notes on a liqueur register with a “Nordic” memory.

The grapes are grown with organic fertilization and integrated phytosanitary defense with the abolition of chemical weeding; it is then carefully selected and hand-picked. Fermentation takes place in French oak barrels of 500 liters (22-24 ° C), followed by maturation in the same fermentation containers, on the fine deposit for 11 months with frequent bâtonnage. Bottling and bottle aging for at least 12 months.

Confini is a warm and enveloping sip that on the nose gives a bouquet characterized by floral and spicy aromas. An intriguing and complex glass that releases the best of its qualities in combination with aperitifs with spicy finger food, oriental cuisine and courses based on cooked or raw fish.
