Pairing Aperitifs, fish, refined dishes
Conte Aymo of Tenuta Montenisa, signed by Marchese Antinori, is a boxed Franciacorta DOCG that conveys understated elegance. The perlage is fine and regular, while the aromatic profile suggests ripe white fruit and small flowers, with a hint of bread crust that adds depth. The intensity is restrained but precise: freshness and minerality support the sip and maintain balance, while the bubbles uphold the texture without overpowering it, offering a sense of composure and palate clarity.

On the palate it reveals well-calibrated creaminess and a lively acidity that lead to a persistent, slightly saline finish. It is perfect for an aperitif and gently accompanies seafood dishes, shellfish, risottos and fresh cheeses; it remains versatile enough for more structured but soft courses. Serve very cold and open shortly before serving: the presentation box also makes it an elegant choice for a gift or for convivial moments when precision and pleasure in the glass are sought.
