Pairing White meats, cold cuts, fresh cheeses
Bright ruby wine, the Dolcetto d’Alba DOC 2023 from Burlotto Gian Carlo presents a fragrant, immediate profile. On the nose there are fresh red fruits — cherry and wild berries — accompanied by subtle floral notes and a hint of aromatic herbs; the overall impression is straightforward, unpretentious. The youthful vintage supports a lively palate, where the acidity is measured and the tannins are soft, giving fluidity and harmony that invite another sip.

The sip is direct but balanced, medium-bodied, with a persistence that stays on the fruit and a slightly savory finish. It lends itself to everyday drinking and informal pairings: cured meats, rustic Piedmont first courses, pizza, and grilled white meats find a good companion in this Dolcetto; it also stands up well to semi-aged cheeses and mushroom-based dishes. It is best served cool, around 14–16 °C, and should be enjoyed young to appreciate its vitality and authentic simplicity.
