Winery history
The winery is located in an ancient country residence dating back to the 16th century; its name derives from the depiction of a sparrowhawk on the manor house’s fireplace. The estate is linked to the Gussalli Beretta family, and its recent management is attributable to Monique Poncelet Gussalli Beretta.
Production philosophy
Production focuses on expressing the terroir through grape selection, extended lees aging for the Franciacorta and the use of oak aging for some cuvées; the vineyards have been managed according to organic practices since 2013.
Terroir and vineyards
The vineyards are situated in the hilly area of Franciacorta, southeast of Lake Iseo. The soils are characterised by calcareous marl and by the influence of pre-Alpine air, resulting in a relatively cool microclimate compared with lower-lying areas.
