Eden Mill's Gin Golf is a gin with a crisp, linear character, dominated by juniper but well balanced by fresh citrus and a light herbal undertone. The aromatic profile is immediate, with lemon zest and green notes that give way to a savoury, saline edge; on the palate it is clean, with good body, a gentle softness and a dry finish that invites another sip. The overall impression is one of understated elegance: not overly spiced, designed to showcase both the spirit neat and more complex mixes.

It lends itself naturally to the classic gin and tonic, enhancing the citrus notes with cold tonic water and a slice of grapefruit or lemon, but it also stands up well in more structured cocktails. Eden Mill is a Scottish producer of gin, whisky and craft beers based at the historic Guardbridge site near St Andrews (Fife). Founded with the aim of combining gin and whisky production on the same site, it offers a range from London Dry styles to barrel-aged expressions, blended malts and limited editions.

Distillation

Copper pot still distillation with plant including a gin still, wash and spirit stills; 'grain-to-glass' process for single malt whisky and botanical distillation for the gins. The new plant was installed with copper stills and equipment for mashing/fermentation.

Ageing

Maturation in oak casks using different types of barrels depending on the expression: ex-bourbon, ex-sherry (Oloroso, PX), Scottish oak casks and finishes in selected casks for some limited editions.
