Oak-aged gin from Milk & Honey Distillery that foregrounds a deeply textural character without sacrificing the typical freshness of gin. On the nose there’s a restrained interplay: ripe citrus peel, a resinous hint and sweet spices that harmonize with subtle vanilla and honey notes from the aging. The texture is compact but not heavy, and the slightly amber color foreshadows a fullness on the palate that speaks of both the distillation and the contact with wood.

On the palate it shows a warm roundness, a light tannic edge that provides structure, and a pleasant persistence in which citrus returns alongside a final spicy touch. Well suited to sipping cocktails and classic reinterpretations, or simply served over ice with an orange twist or a sprig of rosemary to emphasize the aromatic component; pairs harmoniously with carpaccios and smoked preparations, selected cured meats, or honey-and-citrus desserts. Serve at a moderate temperature to highlight its complexity.

Distillation

Distillation with copper pot stills; the gins are produced on a single malt new-make (barley malt base).

Ageing

For aged gins: finishing for several months in STR red wine casks; for whiskies: maturation in ex-bourbon and ex-sherry casks, with finishes and experiments in various cask types.
