Distillation
Artisanal small‑batch processing; for Dutch Courage Dry Gin each botanical is distilled separately, with a series of multiple distillations (the product page cites a total of 14 distillations for that recipe). For whisky and genever traditional processes are used, with long fermentations and slow/soft distillations where specified.
Ageing
Some products (e.g. aged gins and Millstone whisky) are finished in casks; example: the 'Aged Dry Gin' matured in 200‑litre American oak barrels. For whisky various types of sherry casks (Oloroso, Pedro Ximénez) and American oak barrels are used, with first-fill/virgin oak in some expressions.
