The production process of the Dutch Courage Old Toms involves meticulous distillation, followed by a maturation period in small oak barrels that add a light touch of vanilla and warm woody notes to the gin. Unlike standard gins, the Dutch Courage Old Toms has an addition of a small amount of natural sugar, which softens the herbaceous notes and enhances the complexity of the flavor.
On the nose, the gin offers intense aromas of fresh citrus, accompanied by subtle nuances of herbs and spices. On the palate, it is smooth and velvety, with balanced sweetness and lingering notes of juniper and citrus that blend perfectly with the spicy and woody elements. Distillation
Artisanal small‑batch processing; for Dutch Courage Dry Gin each botanical is distilled separately, with a series of multiple distillations (the product page cites a total of 14 distillations for that recipe). For whisky and genever traditional processes are used, with long fermentations and slow/soft distillations where specified.
Ageing
Some products (e.g. aged gins and Millstone whisky) are finished in casks; example: the 'Aged Dry Gin' matured in 200‑litre American oak barrels. For whisky various types of sherry casks (Oloroso, Pedro Ximénez) and American oak barrels are used, with first-fill/virgin oak in some expressions.
