Marolo produces a grappa made from Brunello pomace that, with double-barrel aging, reveals a surprising complexity without losing its clarity. The color is golden and on the nose it opens with notes of stewed fruit and dried plum, followed by sweet spices and a touch of vanilla derived from contact with the wood. The aromatic profile is intense yet restrained, with an olfactory texture that invites a sip without being intrusive.

On the palate it is full and enveloping: a soft entrance, measured warmth and good drinkability that preserve freshness and purity. The finish is long, with returns of almond, bitter cocoa and subtle tobacco; the ending is warm and savory, suited to those who seek a structured yet elegant grappa. It can also accompany light cigars and is best enjoyed slowly to appreciate its evolution in the glass. Ideal at the end of a meal with dark chocolate, aged cheeses or simply for contemplation, it should be served in a spirits glass at room temperature to appreciate its depth.
