In the glass it shows very fine perlage and a vivid brightness, with a light pale pink halo that betrays its blanc de noir origin. The bouquet opens with notes of bread crust and yeast, accompanied by small red fruits delicately sketched and a hint of citrus that keeps the profile fresh. The palate is lively, supported by good acidity and a pleasant sapidity that balances the glyceric component; the mousse is creamy but not intrusive, offering a taut, luminous texture. The finish remains dry, with returns of crust and citrus that invite a second sip.

It is a Metodo Classico of elegant, solid character, suitable both for aperitif and for more structured dishes. It pairs well with raw seafood and shellfish, finds balance with delicate cured meats, and also stands up to poultry dishes or fresh cheeses. Recommended to serve chilled in not-too-large glasses to appreciate its freshness, persistence and that final sapidity which makes it versatile and enjoyable throughout the meal.
