Le uve vengono interamente raccolte a mano, a perfetta maturazione e nelle ore più fresche del mattino. In breve tempo giungono in cantina, dove viene fatta una pressatura soffice delle uve intere. Il mosto fiore così ottenuto, dopo un primo travaso, viene collocato nelle vasche di fermentazione a temperatura controllata. Il vino rimane quindi sulle sue fecce fini per 8-9 mesi e poi imbottigliato.

Giallo paglierino con riflessi verdognoli, bouquet ampio, aromatico; emergono i fiori bianchi e le note speziate: il pepe rosa e nero “la fa da padrone”. All’assaggio la mineralità è incredibile.

Ideale l’abbinamento con i funghi sia declinati in antipasti, sia in primi piatti, si sposa perfettamente con affettati e formaggi. Stupendo con pesci grassi.
