The Novello Merlot IGT Veneto Montelvini wine is produced in Venegazzù in the province of Treviso. It is the flagship of the company, the first wine that is born and is ready in the vintage-, a label that expresses all of itself until spring, the result of a targeted technical choice that sees the product derived from carbonic maceration blending (about 40%) with the must obtained from fermentation at a controlled temperature with selected yeasts.
The bunches are fermented in tanks saturated with carbon dioxide for about 5-8 days, then the must is divided from the marc and fermented at a controlled temperature with selected yeast. After fermentation, the standard procedures of centrifugation, cold stabilization and filtration follow; thanks to this the wine is bottled in the very first days of November.
In the glass it shines in its intense ruby red color with bright purple hues. The nose is decidedly intense and elegant, rich in harmonic nuances, with decisive floral and fruity hints. The taste is full, pleasantly harmonious and fragrant, and with the right tannins. A drink capable of offering a fresh, fruity and floral sip that evoke the flavors of cherry, blackberry and strawberry, with a background of violet and pink nuances.
A perfect wine for the whole meal that goes perfectly with all dishes, soups, meats, cheeses, desserts, as long as they are not overly elaborate and spicy.
The natural evolution of wine can lead to the appearance of sediments on the bottom.
